Catturón is a rare, naturally occurring mutation of the Caturra coffee plant, grown by only a few farms, including Finca Villa Betulia in Colombia. It’s gaining attention not just for its strong disease resistance and high yield, but for its incredibly fruity flavor. This microlot has bright notes of pineapple, raspberry, strawberry, watermelon, hibiscus, and sangria-like tartness.
Honey-processed means the beans are dried with some of the coffee’s natural fruit coating still on them (not actual honey). This process uses less water and creates a cup that’s sweeter and fruitier than a washed coffee, but cleaner and less intense than a natural, with round acidity and a smooth, complex mouthfeel.
